Apricot Cookies


I shouldn't really make this biscuits as they are just too delicious and I can't rest until they have all been eaten!!  That would explain the hips..........

They are an Annabel Karmel recipe.  I diligently used her cookery books to make food for my baby, cursed the number of steps in some recipes, the long lists of ingredients and was glad when MLG progressed to things the rest of the family ate.  These wonderfully simple biscuits, however, I can not give up!

Annabel's Apricot Cookies

100g/4oz unsalted butter
100g/4oz cream cheese
100g/4oz caster sugar
75g/3oz plain flour
50g/2oz chopped dried apricots
50g/2oz white chocolate chips or chopped white chocolate

Preheat the oven to 180c/350F/Gas mark 4.  

In a bowl, cream together the butter and cream cheese.  Add the sugar and beat until fluffy.  Add the flour, then fold in the apricots and chocolate.

Drop heaped teaspoons of the mixture on to non-stick or lined baking sheets and bake for about 15 minutes or until golden.  Allow them to cool and harden for a few minutes before transferring on to a wire rack.
